Pandemic life has brought with it many lifestyle changes, both good and bad.   For me, the best change has been embracing a plant-based diet, as I feel better both physically and mentally. Changing my shopping and cooking did take some adjustment, though with so many great meat and dairy replacements, it’s now easier than ever to make a great vegan meal.  This recipe is simple and takes Avocado Toast up a notch.  You don’t have to be vegan to try it and like it.  It’s great for breakfast, lunch or a light supper with a green salad. 

Please note that Soyrizo is available at Trader Joe’s and most supermarkets in the refrigerated Vegan Foods section.

Avocado Toast with Soyrizo

Serves 2

1 package soyrizo

Cooking Spray  

 

Avocado Mash

2 large ripe avocados

¼ tsp kosher salt or to taste

Juice of half a lemon (a bit more than a Tablespoon)

1 T finely chopped sweet onion such as Vidalia

2 T finely chopped cilantro (fresh not dried)

4 slices bread. Whole Grain or sourdough work best

 

Cook the Soyrizo according to package directions breaking up the sausage into crumbles as it cooks. I like to cook it until it is dry and extra crispy. This will take about 15 minutes. Just be careful to watch that it doesn’t burn adding extra cooking spray if necessary.

While the Soyrizo is cooking make the Avocado mash.

Chop the onion into extra small dice. Finely chop the cilantro leaves.  Scoop the avocado flesh into a mixing bowl. Add the salt and mash with a fork until well incorporated. Add the lemon juice, onion and cilantro mixing until incorporated, being careful not to over mix as bits of avocado chunks add texture. Taste and adjust salt/lemon to your liking.  I keep the mash simple as the soyrizo has spice and seasonings.

Once the Soyrizo is fully cooked and avocado mash finished, lightly toast the 4 slices of bread.

Spread ¼ of the avocado mash onto each slice of toasted bread.

Top generously with soyrizo crumbles.  Plate and enjoy!

Use any leftover soyrizo crumbles in a salad or other recipes.
