Here is a good recipe to start your day with chocolate. (Disclaimer, I had to improvise with what I had in the pantry, so feel free to make substitutions with what you’ve got at home. Now is the time to be creative!) ☺

Today is not the day for moderation please. Let’s look at these facts about chocolate instead and then use it in every meal.

1. Chocolate has been shown to battle depression.
2. Dark chocolate contains antioxidants that greatly contribute to strengthening the immune system.
3. Chocolate helps the brain release a set of chemicals that increases production of endorphins and serotonin.
4. Dark chocolate may help you lose weight too! Research suggests it may lessen cravings for sweet and salty foods, reducing the chance that you’ll reach for unhealthy snack options.

Oatmeal Chocolate Breakfast Muffins Yields: 12ish servings

Ingredients

  • 2 cups rolled oats I used Bob’s Red Mill minute oats
  • 1/4 cup unsweetened cocoa powder/ I used a chocolate nib bar and just chopped it into pieces
  • 1/3 cup coconut palm sugar or / whatever sweetener you have, I used maple syrup
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon It enhances the flavor of chocolate J
  • 1/2 teaspoon kosher salt or sea salt
  • 1/2 cup dark or bittersweet chocolate chip Enjoy! s I used another chocolate bar with sea salt.
  • I added 2 tablespoons of chia seeds
  • 1 cup Greek yogurt? I used brown cow coffee yogurt
  • 2 large vine ripe bananas? I had 1 large banana
  • 2 large eggs
  • 1 1/2 teaspoons pure vanilla extract
  • 1/4 cup (unrefined) coconut oil Nope just used Olive Oil 2and tablespoons BUTTER

Instructions

  1. Preheat oven to 425 degrees.
  2. Place oats in a blender on high, (BUT NOT AN ESSENTIAL STEP) and grind until a flour like consistency. Transfer to a bowl and mix with the cocoa powder, coconut palm sugar, baking powder, baking soda, cinnamon, and salt. Chia seeds
  3. Add the yogurt, bananas, eggs, oil, and vanilla to the bowl and mix until all ingredients are fully combined.
  4. Pour the wet ingredients into the dry and mix well. Fold in the ( OY I didn’t fold I tossed) chocolate chips. Line a muffin pan with muffin papers (NON OF THOSE) or grease pan. Ladle mixture into each cup, filling 3/4 of the way. Bake for 20 minutes.
  5. Remove and allow muffins to cool on cake rack. ( Yep I skipped this direction also and just popped a nice hot bit into my mouth) Who the heck has a cake rack
