This delicious dish comes courtesy of Mavis’ Kitchen cookbook which is available now! It can easily work as a side, appetizer or anytime snack. If you like artichokes, you’re going to love these.

Ingredients:

2-6 oz. jars marinated artichokes
Dash of Tabasco
1 onion, chopped
½ tsp. oregano
1 garlic clove, minced
Salt and pepper to taste
4 eggs
2 cups Cheddar cheese, shredded
1/2 to 1 cup breadcrumbs

Drain juice from 1 jar of artichokes into a skillet. Sauté onion and garlic in artichoke juice.

Drain other jar (discard juice) and chop up all artichokes, then add them to the onion and garlic mixture. Let simmer.

In a bowl, beat eggs and then add the breadcrumbs, Tabasco, oregano, salt, pepper, cheese, and artichoke mixture.

Mix well and put into a 9 x 9 non-greased pan and bake for 30 minutes at 350o (depending on your oven, they may need to cook longer).

It should be light brown on top and firm in the middle. Let cool, then cut into squares. This reheats well if you want to make it in advance.
