Cat’s Amazing Kale salad.

Start with fresh Italian black kale, wash, pat dry, and remove the vein from down the middle of the kale.

I like it chopped, it’s easier to eat.

4 table spoons fresh lemon juice. Don’t put it all in at once, save some on the side and add to taste

About 4 tablespoons extra virgin olive oil (the better the oil, the better the taste),

4 cloves crushed garlic,

A punch red pepper flakes,

A pinch of salt

A pinch of black pepper

Crushed pistachios about a 1/4-cup

4 to 5 tablespoons of grated pecorino Or romano cheese, If you’re vegan skip this step

Toss together. Let it sit for 5 to10 minutes

If you like you can top it off with panko-style breadcrumbs

To insure they are gluten free you will have to make your own

using gluten-free rice chex cereal, just put it in a baggie and crush.
